Abstract

This research was conducted at Hotel Gran Puri Manado. Hotel Gran Puri Manado is a company engaged in the service sector that provides accommodation services and always tries to meet the needs for the procurement of raw materials, especially food and beverage ingredients that meet standards in order to provide the best for its guests. This research is a qualitative descriptive study. The data collection method is carried out by means of observation, interviews and documentation. The data analysis method is carried out by collecting data related to this research. The problem studied is the constraints in the procurement of raw materials. such as late arrival of goods, such as examples written in the goods ordering form that should arrive according to what is listed therein, but the goods still often do not arrive on time. In addition, the problem that is often encountered is the goods ordered by the user, but the arrival of the goods does not match the documents submitted and causes operational activities at the outlet to be hampered. The results of the analysis in this study can be concluded that the purchasing system at the Gran Puri Hotel in general is not effective and efficient, it still needs to be improved. Because there are several things such as inventory management and inventory monitoring, as well as periodic assessments to ensure that existing suppliers still provide quality at competitive prices. The author suggests considering recruiting purchasing employees, so that the purchasing process becomes more focused and efficient. This recruitment can help in handling more complex tasks better and more carefully.
