Abstract

Food and Beverage (F&B) inventory management is a crucial aspect of hotel operations, especially to ensure efficiency and reduce losses. Hotel Gran Puri Manado as one of the leading hotels in Manado faces challenges in managing food and beverage inventory which requires an effective internal control system. This study aims to analyze the internal control system implemented at Hotel Gran Puri Manado and evaluate its effectiveness in managing food and beverage inventory. The research method used is descriptive qualitative method with case study approach. Data was collected through three main techniques: in-depth interviews with relevant managers and staff, direct observation of the inventory management process, and analysis of documentation such as inventory reports and standard operating procedures. The data analysis technique used is qualitative descriptive analysis which aims to describe and evaluate the existing system.
